Pan Fried Salmon with Lemon Butter sauce
Tonight's dinner was light and easy enough to prepare. I simply pan fried a salmon fillet and topped it with some lemon butter sauce which I got from the net. Although its appearance was nothing like the picture from the net, it tasted lovely paired with the salmon. I had this with a side of steamed veggie.
1 salmon fillet pan fried
Clam broth (I used canned broth)and reserved the clams for another day
Milk - about 1/2 cup
1 pip of chopped garlic
1 bay leaf
A drop of red wine (although the recipe called for sherry)
Butter (4 tablespoons)
1 tablespoon of flour
1 tablespoons of lemon juice
White pepper powder
Let all the boiling ingredients reduce to half its quantity and then sieve and leave aside. In a separate pan heat 1 tablespoon of butter and when it starts to bubble sprinkle the flour in slowly and use a whisk to mix, stir for a few minutes before adding the sieved mixture and continue to whisk, if it all becomes too thick add some water, follow with the lemon juice and the white pepper powder.
This sauce/gravy is a great accompaniment to any seafood dish.
